- 90g of smooth peanut butter (1/2 cup)
- 175g golden syrup (1/2 cup corn syrup)
- 100g soft light brown sugar (1/2 cup packed)
- 1 TBS unsalted butter
- 50g crisp rice cereal (2 cups)
- 150g of roasted peanuts (1 cup)
- 180g of chocolate chips (1 cup)
- chocolate sprinkles to decorate
Baked Carrot Cake Donuts

Your favourite cake in a donut
- 300g self raising flour (2 cups)
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 75g toasted walnut pieces (3/4 cup)
- 115g soft light brown sugar (1/2 cup packed)
- 2 large free range eggs, beaten
- 200ml of milk (generous 3.4 cup)
- 150ml of sunflower oil (scant 2/3 cup)
- 1 large carrot, peeled and grated
- 1 tsp vanilla extract
- 1 tsp orange extrace (can use the finely grated zest of one orange)
- For the glaze:
- 150g of cream cheese (5 ounces)
- (Do not use no fat)
- 50g sifted icing sugar (1/3 cup)
- 1 tsp lemon juice
- chopped toasted walnut pieces, optional
Toad In The Hole

A delightful and tasty recipe I discovered shortly after I arrived here was a lovely dish called Toad in the Hole
- 2 large Eggs
- 4 oz (125g) Plain Flour
- 1/4 Pint (150ml) Milk
- 1/4 Pint (150ml) Cold Water
- Salt & Pepper
- 6 Good Quality Herby Sausages of your choosing (I like Cumberland myself)
- 2 tbsp Lard or Dripping or Cooking Oil

- 4 large potatoes, peeled and cut into cubes
- 1 TBS vegetable oil
- 1 onion, peeled and diced
- 1 red pepper (deseeded and chopped)
- 1 large tin of corned beef (chopped)
- 1 to 2 TBS creamed horseradish
- 142 ml of double cream (a scant 1/2 cup)
- salt and freshly ground black pepper to taste

Spicy Plum Chutney

- 1.5kg of ripe plums
- 2 pounds of bramley apples (peeled and chopped)
- 2 fat cloves of garlic (peeled and finely chopped)
- 450g cooking onions (peeled and chopped)
- 200g sultana raisins
- 2 star anise
- 4 cardamom pods (bruised with knife)
- 200g granulated sugar
- 400ml white wine vinegar
- sea salt and freshly ground black pepper
- 200ml port
Sticky Toffee Cake

- 300ml of water
- 1 tsp bicarbonate of soda
- 6 ounces soft light brown sugar
- 4 ounces butter at room temperature
- 1 tsp vanilla

- 6 ounces self raising flour
- For the icing:
- 6 TBS double cream
- 3 ounces soft light brown sugar
- 1 ounce butter
- 1 ounce icing sugar (sifted)
Black Currant Drizzle Cake

- 6 ounces of very soft butter (3/4 cup)
- 6 ounces golden caster sugar (3/4 cup)
- 9 ounces self raising flour (1 1/2 cups) sifted
- 2 large free range eggs
- 2 tsp pure vanilla
- 6 ounces of black currants (about 2 cups)
- 5 ounces granulated sugar (3/4 cup)
- 2 TBS of fresh lemon juice
Braised Red Cabbage and Apple

A delicious side dish which goes very well with pork, duck, goose, turkey and venison
- 1 small head of red cabbage that is trimmed, cored and thinly shredded with a sharp knife (Don't grate it. You want thin strands.)
- 1 medium onion, peeled and finely chopped
- 1 large Granny Smith apple, peeled and chopped
- 4 TBS butter
- 1 TBS soft light brown sugar, packed
- 1 tsp coarse salt
- 1/2 tsp cinnamon
- 1/4 tsp ground cloves
- 1/4 tsp freshly grated nutmeg
- 1 heaped dessert spoon of red currant jelly
- 80ml of water (1/3 cup)
- 80ml of distilled white vinegar (1/3 cup)
Cheese and Onion, Potato and Cauliflower Bake

Deliciously different than the usually creamy sauced potato bake
- 2 large baking potatoes peeled and cut into 1/2 inch slices
- 1/2 of a small cauliflower trimmed and cut into 1/2 inch slices
- 1 medium onion, peeled and cut into 1/2 inch slices
- 8 ounces of grated strong cheddare cheese (2 cups)
- 2 tsp dried thyme
- freshly ground black pepper
- Salt
- 80ml of chicken stock (about 1/3 cup)
- Butter to dot the top
