Mustard and Garlic Sauced Chops

Inspired by a Nigel Slater recipe, necessity being the mother of invention
- 2 large thick free range good quality pork chops (rind removed
- but with a healthy layer of fat on the outer edge).
- 1 TBS butter
- 1 TBS olive oil
- 2 large unpeeled cloves of garlic, mashed lightly
- Fine sea salt and freshly ground black pepper to taste
- 6 fluid ounces of white wine
- 6 TBS garlic and herb boursin cheese
- 1 heaped TBS of smooth Dijon mustard
- 1 heaped TBS of grainy Dijon mustard
- 8 cornichons - chopped coarsely
- about 4 pickled onions from the cornichon jar if you have them
- a splash of good quality chicken stock if needed
Holiday Danish

Another cheat recipe which used refrigerator croissant dough
- 1 (250g) tube of Jus-Rol Croissant dough (in North America use Pillsbury Crescent Roll dough)
- 250g of full fat cream cheese (8 ounces)
- 3.5 ounces caster sugar (1/2 cup)
- 3 TBS sifted plain flour
- 1 tsp vanilla extract
- 1/2 of a (411g) jar of prepared mincemeat (1 cup)
- demerara sugar (turbinado)
- To ice:
- 2 ounces sifted icing sugar (1/2 cup)
- 2 TBS heavy cream
- 1/8 tsp vanilla extract
Cheeseburger Mac & Cheese

Macaroni and Cheese with a delicious burger layer in the centre and topped with crispy bacon
- One four serving recipe of macaroni and cheese
- one half of the Burger mince recipe
- 4 slices of streaky bacon, partially cooked and cut in half
- 1/2 cup of soft white bread crumbs
- 1 TBS melted butter
- 4 ounces of strong cheddar cheese, grated (about 1 cup)
Moussaka

Inexpensive and delicious
- Olive oil
- 3 aubergines, sliced 1/2 inch thick (Eggplants)
- 2 medium brown onions - peeled and finely chopped
- 2 fat cloves of garlic - peeled and minced
- 1 1/2 pounds minced lamb
- Fine sea salt and freshly ground black pepper
- 1 tsp ground cinnamon
- 1 400g tin of chopped plum tomatoes in tomato juice - undrained
- (14 ounce tin)
- 3 TBS tomato puree (tomato paste)
- 60ml of white wine (1/4 cup)
- 2 TBS parsley
- finely grated Parmesan cheese
- For the Bechamel:
- 600 ml of full fat milk
- (1 pint, or 2 1/3 cups)
- 1 medium brown onion - peeled and studded with a couple of cloves
- 1 bay leaf - broken
- 2 TBS unsalted butter
- 2 TBS plain flour
- A touch of nutmeg
- Fine sea salt and freshly ground black pepper to taste
The World's Best Greek Salad

- 6 TBS olive oil (Divided)
- 1 TBS red wine vinegar
- 1 1/2 TBS fresh lemon juice
- 2 fat cloves of garlic, peeled and minced
- 1 tsp dried oregano (I like to use Bart's freeze dried)
- For the Salad:
- 1 head of Romaine lettuce, washed, dried, and torn into
- bite sized pieces
- 1 punnet of baby plum tomatoes, quartered
- (or 3 large plum tomatoes, seeded and coarsely chopped)
- 1 medium red onion, peeled and sliced into thin rings
- 1 small pepper, seeded and chopped (Green or yellow)
- 3/4 cup pitted kalamata olives
- 3/4 cup crumbled feta cheese
Lemon Mousse

- 1/4 cup (60ml) fresh lemon juice
- 3/4 cup (185g) caster sugar
- 4 large eggs (separated)
- 5 1/2 ounces unsalted butter (cut into small pieces)
Sausage and Mushroom Casserole

A simple and deliciously heart warming and comforting casserole for a cold winter's day
- 1 tsp sunflower oil
- 100g of thick bacon lardons (about 1/2 cup)
- 1 large onion (peeled and sliced into thin wedges)
- 1 tsp fresh thyme leaves
- 2 tsp plain flour
- 350ml of cloudy apple juice (can use white wine if desired) (1 1/2 cups)
- 1 bay leaf, broken
- 1 clove of garlic (peeled and crushed)
- 250g of halved button mushrooms (about 2 cups)
- Salt and black pepper to taste
Apple Upside Down Cake

Sweetly caramelized apples, atop a deliciously moist and lightly spiced cake
- For the apples:
- 3 medium crisp eating apples
- 150g of soft light brown sugar (3/4 cup packed)
- 1 tsp ground cinnamon
- 4 TBS butter melted
- For the Cake:
- 245g of plain flour (1 3/4 cup)
- pinch salt
- 2 tsp baking powder
- 1 tsp ground cinnamon
- 1/4 tsp freshly ground nutmeg
- 115g of butter, softened
- 145g of caster sugar (3/4 cup)
- 2 large free range eggs
- 1 tsp pure vanilla
- 1/2 tsp lemon extract
- 156 ml milk (2/3 cup)
Buttermilk Chicken

I'm not sure how it works, but the buttermilk in this recipe helps to create chicken that is moist and very tender
- 2 ounces butter (1/4 cup)
- 4 skinless, boneless chicken breasts
- 1/2 tsp salt
- 1/2 tsp freshly ground black pepper
- 1/4 tsp garlic powder
- 2 heaped TBS of plain flour
- 2 284ml containers of buttermilk (about 3 cups)
- 1 (285g) tin of Batchelors condensed cream of mushroom soup (Campbells)
- chopped fresh flat leaf parsley to garnish
Cranberry, Pecan and White Chocolate Flap Jacks

- 5 ounces butter, plus extra for greasing (1/2 cup plus 2 TBS)
- 200g of porridge oats (2 cups)
- 25g of dessicated coconut (1/4 cup)
- 50g light muscovado sugar ( generous 1/3 cup packed)
- 5 TBS golden syrup
- 6 ounces toasted pecans and broken into chunks with your hands (1 1/4 cups)
- 2 ounces dried cranberries (1/3 cup)
- 100g bar of white chocolate (about 3 1/2 ounces)
