Moroccan grated carrot and beetroot salad

A kicking side salad on a hot summer evening
Ingredients
- 2 cups grated carrot
- 1 cup grated fresh beetroot
- 1/2 cup raisins
- 1/2 tsp sweet paprika
- 1/4 tsp ground cumin
- 1/4 tsp ground cinnamon
- pinch of salt
- pinch of chilli powder
- 2 tbsp lemon juice
- 2 tsp honey

Step 1
Grate the beetroot into a sieve and rinse with cold water to rinse the juices off. Pat dry and tip into a bowl.
Grate the carrots and add and raisins to the beetroot, stir gently to combine.
In another bowl, whisk together the paprika, cumin, cinnamon, salt and chilli powder.
Add the lemon juice and honey to the dry ingredients and whisk until smooth.
Pour over the carrots and beetroot and carefully fold in until its all coated.
Leave to sit for an hour to let all the marinate seep into the carrots and beetroot.
