Cook the rice vermicelli in boiling water for 3 minutes. Rinse well, drain and reserve.
Thoroughly shell the prawns. Finely chop the garlic.
In a food processor, blend the prawns, vermicelli, garlic and pepper.
Cut the sugarcane into sticks 15cm long by 0.5 cm in diameter.
Wrap some prawn paste around each stick of sugar cane.
In a nonstick pan, sear the prawn sticks. They're cooked when they become a beautiful pink colour.
