Ingredients

  • 125g butter, softened
  • 75g light muscovado sugar
  • 150g caster sugar
  • 1 egg, lightly beaten
  • 1 tsp almond flavoring
  • 225g self-raising flour
  • ½ tsp salt
  • 200g chopped almond

Preparation

Step 1

Preheat the oven to 180°C, gas mark 4

Step 2

Cream the butter and sugar, once creamed, combine the egg and almond flavoring

Step 3

sift in the flour and salt then add the chopped almond and mix together

Step 4

place in the fridge for 5-10 minutes (to make the cookie dough firmer)

Step 5

roll in to small balls and place on baking paper and push down in to flat disk

Step 6

place the cookies in the preheated oven for 10 minutes or till just set for a gooey cookie or leave for 2-5 minutes for a crispier cookie.

Step 7

take them out of the oven and leave to cool for a few minutes, then transfer to a wire cooling rack
