Step 1
Prick all the cherry tomatoes with cocktail sticks, making sure you pierce them far enough so the sticks stay in, but without piercing the other side. Set aside.
Prepare a baking sheet with greaseproof paper
Step 2
For the caramel:
Take a small saucepan put 75g sugar & about the equivalent of water, just so that it covers the sugar; heat without stirring with a spoon! Stir the pot by holding the handle of the pot, regularly during cooking. When the mixture begins to brown, be careful that it does not burn, leave it to brown slightly, then remove from the heat immediately.
Step 3
Pan in hand, dip the tomatoes ENTIRELY into the caramel, holding them by the sticks, then place them on the baking sheet with the greaseproof paper. It's all in the rhythm because if you're not quick the caramel will harden.
