Appetiser spoons of grapefruit, salmon and sesame

Step 1

Prepare the salmon by removing the bones with tweezers, remove the skin and the black. Cut into small cubes.

Step 2

Peel the grapefruit over a bowl, then cut out the insides by sliding a knife along each membrane to retrieve the segments and remove the white skin. Cut the segments into cubes.

Step 3

Toss with the diced salmon, add the oils, and a pinch of salt. Put everything in Chinese appetiser spoons and sprinkle the top with pumpkin seeds.
