Fricassee of smoked ham and vegetables

Ingredients
- 1 tablespoon of sunflower oil,
- 1 onion, chopped
- 3 cloves of garlic crushed
- 450 g thick slices of smoked ham, without the rind and diced
- 1 courgette sliced,
- 1 red pepper, seeded and minced
- 30 cl chicken stock, hot
- 420 g canned white beans, drained
- 2 tbsp. of mustard,
- salt and pepper
- 4 tbsp. double cream,
- 2 tbsp. chopped parsley

Preparation
Step 1
Heat the oil in a casserole.
Add the onion and garlic and fry lightly for 3 to 4 minutes over medium heat, without browning.
Add the ham, courgette and peppers. Sauté for 4 to 5 minutes.
Step 2
Drizzle with stock. Bring to a boil, then reduce the heat and simmer for 10 minutes.
Stir in the beans and mustard. Salt and pepper. Bring to a boil, stir, then remove from heat. Stir in the cream and parsley. Serve with a green salad and seasoning (vinaigrette).
