Fricassee of smoked ham and vegetables

Ingredients

  • 1 tablespoon of sunflower oil,
  • 1 onion, chopped
  • 3 cloves of garlic crushed
  • 450 g thick slices of smoked ham, without the rind and diced
  • 1 courgette sliced​​,
  • 1 red pepper, seeded and minced
  • 30 cl chicken stock, hot
  • 420 g canned white beans, drained
  • 2 tbsp. of mustard,
  • salt and pepper
  • 4 tbsp. double cream,
  • 2 tbsp. chopped parsley

Preparation

Step 1

Heat the oil in a casserole.

Add the onion and garlic and fry lightly for 3 to 4 minutes over medium heat, without browning.
Add the ham, courgette and peppers. Sauté for 4 to 5 minutes.

Step 2

Drizzle with stock. Bring to a boil, then reduce the heat and simmer for 10 minutes.

Stir in the beans and mustard. Salt and pepper. Bring to a boil, stir, then remove from heat. Stir in the cream and parsley. Serve with a green salad and seasoning (vinaigrette).
