Mini pizza with cherry tomatoes

Preparation

Step 1

Wash the cherry tomatoes and hull them. Peel the shallots and cut them into thin strips. Heat the butter, sugar and vinegar over medium heat in a pan until the mixture is melted.

Step 2

Add the shallots and cherry tomatoes and caramelise for 3-4mins. Salt and pepper, add thyme. Divide the mixture into bottom of 12 silicone tart tins, 6cm in diameter.

Step 3

Cut discs of 7cm in diameter in a pizza dough, cover it in the cherry tomatoes and the edges inwards slightly. Bake 15 minutes until the pastry is golden. Remove from the tins and serve hot or warm.
