Apple, Walnut and Cinnamon Cake

A great birthday cake I made for my OH with lots of autumn flavours and extremely rich and bad for you with mascarp
- Cake
- 190g Plain Flour
- 50g Oats
- 1tsp Bicarbonate of Soda
- 1tsp Cinnamon
- 1tsp All Spice
- 1/2tsp Freshly Grated Nutmeg
- 175g Caster Sugar
- Pinch of Salt
- 175ml Sunflower Oil (or other flavourless oil)
- 2 Eggs
- 1tsp Vanilla Bean Paste
- 2 Cooking Apples, peeled and finely chopped
- 50g Walnuts (roughly chopped)
- Frosting
- 125g Butter (room temperature)
- 250g Mascarpone (room temperature)
- 1tsp Vanilla Bean Paste
- 250g Icing Sugar
- Walnuts and dried apple for decoration
