Hello Mog, so tell us...


When did you begin your blog and what inspired you to start it?


I started blogging in November 2012. I have always loved to cook and to eat! I worked as a chef for many years and since changing jobs I found I missed it so much I decided to start a blog to share what I had learned. It's such a great thing to do, I don't know why I didn't do it sooner.

In your wildest dreams where will your blog take you as it develops?


I hope to develop a tool for people to use to create better food for their families and friends. As the blog is growing there are more and more recipes for people to be inspired by. In the short term my goal is to spread the word of mogfood.com. I would also like to grow the social side of things, getting people involved by submitting their own family recipes and pictures to share with others.

What is your favourite dish of all time?


That's a really difficult one. I have been lucky enough to eat some of the finest food the country has to offer. I have always loved Risotto. Mushroom or Pea, I find it hard to look beyond these on a menu. Beautifully simple and very satisfying. Good ingredients are the key, you will only get out what you put in.

We really like your photos, in your opinion what makes a dish beautiful?


I like to see colours and layers on a plate. Even when cooking at home, if you take time to present your food, it will be much more rewarding.

When you eat you use all of your senses, I think that's what makes it so special. Food has to look and smell good, not to mention the flavours and textures have to balance. It sounds complex (and can be) but the simplicity of beautiful pasta with truffles and parmesan has all of these things in abundance, it is the simple complexity of dishes like this that makes food so exciting for me.

Do you have a secret weapon in the kitchen?


I love gadgets and anything to make processes quicker is a winner for me. It doesn't have to be technical. A good grater or nice heavy pans will certainly improve your results.

In my kitchen I couldn't go without my Magimix Food Processor and also my Kitchen Aid Mixer just for the sheer time they save me in mixing, blending and chopping.

Are there any chefs that you admire in particular?


I really like to watch Simon Hopkinson, Raymond Blanc and Michel Roux. All great chefs that cook delicious classic dishes. I think the best chef to have cooked in Britain is Marco Pierre White for his tenacity and his sheer drive and passion to succeed.

If you could be a contestant or guest on any cooking show what show would you choose?


Great British Menu without a doubt. The best UK chefs cooking pure gastronomy.
