Christmas Cranberry Bread and Butter Pudding
A rich bread and butter pudding with cinnamon and cranberry delicious to serve as after dinner pudding
- 4 slices white bread
- 25g/1oz butter
- 25g /1oz dried cranberries
- 1/2 teaspoon cinnamon
- 200ml milk
- 50ml double cream
- 2 free-range eggs (beaten)
- 25 g/1oz sugar

Grease 4 ramekin dishes.
Spread the bread with butter. cut into small pieces to fit the dish.
Arrange a layer of bread into the ramekin dishes. Sprinkle with cranberries. Then arrange another layer of bread on top.
Gently warm the milk and cream. Pour into the beaten eggs with the sugar. Whisk lightly.
Pour the custard over the prepared bread. Sprinkle with cinnamon. Leave to stand for 20 minutes.
Place the dishes into a preheated oven 180C/350F/ Gas Mark 4 for 20 to 25 minutes until the custard has set.
Serve with vanilla ice cream.
