Chocolate Prune Torte

A decadent healthy moist treat to teat yourself and others too on a cold winters night. Serve with crème fraiche or natural yogurt ( I prefer soya yogurt)

Ingredients

  • 250g no soak prunes halved
  • 4 tbsp. brandy
  • 50g butter ( 1/2 and 1/2 with coconut oil if desired)
  • 25g cocoa powder
  • 100g dark chocolate ( min 70% cocoa solids) broken into pieces
  • 175g golden caster sugar ( I substitute 1/2 with maple syrup)
  • 4 egg whites
  • 85g plain flour ( I use spelt flour)
  • 1tsp ground cinnamon

Preparation

Step 1

soak prunes in brandy for 1 hour
heat oven to 190 or 170 fan
butter 23cm loose bottom cake tin

Step 2

Put cocoa, chocolate, butter and 140g sugar in pan
add 100ml hot water and gently heat until smooth, leave to cool slightly

Step 3

whisk egg whites to soft peaks, gradually whisk in remaining sugar. Sift the flour and cinnamon over and gently fold in with metal spoon

Step 4

Add chocolate mixture and fold in combined. Pour mixture into tin and arrange prunes on top. bake for 30 mins.

Step 5

serve warm with yogurt or crème fraiche and grated dark chocolate

For extra flavour can add zest of orange if you like this flavour
The coconut oil butter mix makes the cake more moist
