Preparation

Step 1

Preheat oven to 180°C.
Grease and line two 8" round cake tins.
In a small bowl, briefly beat the eggs with a fork.
Grate the large orange to get the zest, then squeeze the juice out.

Step 2

Beat the butter and sugar together.
Add the eggs, a little at a time, beating well after each addition.
Fold in the flour.

Step 3

Split the mixture into two bowls.
ORANGE: Add the orange zest, 1tbsp of the juice and, if using, a couple of drops of orange food colouring.
CHOCOLATE: Add the cocoa powder and 1tbsp milk.

Step 4

Mix both mixtures well.
Spoon alternate dollops of mixture into the tins.
Use a skewer to create the marble effect by dragging it through the cake. Don't overdo it or you won't see the pattern. Smooth the top if necessary.

Step 5

Bake for 40-45 (ish!) minutes until golden and risen, and a skewer inserted into the centre comes out clean.
Remove from the tins and cool on a wire rack.

Step 6

Cream the butter until soft.
Add the icing sugar a little at a time, beating well after each addition.
Split into two bowls.

Step 7

ORANGE: Add the orange zest and 1tbsp orange juice. (and orange colouring, if you wish)
CHOCOLATE: Add the cocoa powder and 1tbsp milk.
Beat both mixtures well.

Step 8

Use the orange butter icing to sandwich the two cakes together. Use a knife to spread the remaining orange flavoured butter icing on top of the cake.

Step 9

Spread the chocolate butter icing all around the edges of the cake.
Snap all the chocolate-orange sticks so that they are just longer than the height of the cake. Squidge them evenly around the sides of the cake, sticking them in place with the chocolate butter icing.

Step 10

Arrange the chocolate orange segments on top of the cake, as you wish.
Finely grate any remaining segments and, using a teaspoon, stick these to the sides of the cake between the chocolate-orange sticks.

If the chocolate cake mix is too solid, add another tbsp milk. The more milk you add the denser the cake will be so try not to add too much.
