Preparation

Step 1

Wash the vegetables.

Step 2

Peel the onions and garlic.
Chop onions and crush or blend the garlic and ginger.
Grate the carrots.
Chop the cabbage.
Split the large hot peppers and green beans.
Cut the cauliflower into pieces, not too big.

Step 3

In a hot frying pan put a little sunflower oil, stir-fry the onions first until soft then the garlic and ginger.

Step 4

Add the turmeric and the large hot peppers.

Step 5

In a saucepan of boiling water cook the cauliflower and cook the the green beans the same way in a separate pan. Cool.
Monitor the cooking, the vegetables should stay crunchy.

Step 6

In a large bowl mix all the vegetables with a little vinegar, salt and pepper. Add the mixture onions, garlic, ginger, peppers and turmeric.

Step 7

Mix well with your hands.
Taste and adjust seasoning if necessary.
Place in the fridge overnight.

Step 8

These vegetables can be accompanied by grilled or roasted meat.
