Cheese and apple chutney lolly-pops

Preparation

Step 1

For the lollies:
Beat the egg whites until stiff with a pinch of salt. Stir in the grated cheese, Espelette pepper, a little salt, one tablespoon of flour and mix to a smooth paste. Make small balls the size of a walnut. Heat 1cm of oil in a frying pan. Cook for 4mins in the pan, turning them gently several times. Drain on kitchen roll.

Step 2

For the chutney: Chop finely the red onion, fry in a teaspoon of natural oil. Thinly slice the apple, remove the skin of the figs, add to the saucepan and fry for 2 minutes. Add the sugar, vinegar and spices, stir, and cook over low heat for at least 2 hours, stirring regularly. The mixture should be quite thick, with a texture similar to a jam.

Step 3

Serve the cheese balls on little sticks to make the lolly-pops and serve with little bowls of chutney.
