Step 1
Heat the cream and infuse, like tea, the pepper in fairly large quantities in the hot cream. Remove from the heat and leave for 30 minutes with a lid. Pour through a conical strainer to collect the flavoured cream.
Step 2
Salt and pepper the steacks and fry in a hot pan to sear them. Remove the meat and keep in a warm place.
Step 3
Put the shallots in the pan over low heat and cook slowly. Add the port wine and reduce by half.
Step 4
Add the brown stock and infused cream with pepper and reduce to a creamy sauce consistency. Coat the steaks and serve!
