Hello Jack Knight, so tell us...


When did you start your blog? What inspired you?


I started my blog in the summer of 2011. I was inspired to start one by the film 'Julie & Julia'. I guess it was because I didn't know what else to do with my life, like Julie Powell herself did. One day I just sat down at my computer, took a deep breath and came up with this blog.

You appear to have a diverse palate of tastes, what international foods influence you the most?


I am mostly influenced by the flavours of South Asia, and the Mediterranean. I just love the freshness of the flavours and how diverse the food is from region to region. No dish is ever really the same.

You appear to bake quite a number of cakes, what is your favourite, and why?


I would say the Maple Syrup and Chocolate Layer Cake I bake for my Mum every year on her birthday. It's based on a recipe from The Hummingbird Bakery in London, and it is heaven.

What is your secret weapon in the kitchen?


Clean hands.

What dish or menu could you not live without?


Roasted tomato soup. It is so incredibly easy, you just roast tomatoes cut in half with wedges of onion, bulbs of garlic, thyme sprigs, a little oil and some balsamic vinegar. Once roasted, you whizz it up in the blender until smooth. So divine.

What is your earliest memory involving food?


Being five years old, and helping my Mum make fairy cakes.

What chefs/cookbooks do you admire most and why?


That's easy, Jamie Oliver. Because he was very inspirational to me when I was a teenage cook.

If you could be a contestant or guest on any cooking show, what show would you choose?


Something to do with River Cottage. I love those shows.

What do you think the most common mistake in the kitchen is?


I think probably not reading the recipe all the way through. We've all done it once or twice in our lives.

Any last words or message for our readers?


Yes, I do.

Don't be afraid of cooking. If you mess something up, don't worry. Even your favourite chef messes up from time to time.
