Easy ''Lithuanian Lazy Cake''

Simple dessert with very basic ingredients
- 360g rich tea biscuits ir digestives
- 397g can of condensed milk
- 100g butter
- 5 tablespoons of cocoa powder
- Small handful of chopped nuts and/or dried fruit of your liking
Lemon Drizzle Cake

Pre-heat the oven to 180C
- 175g butter, softened
- 175g caster sugar
- 2 unwaxed lemons
- 3 eggs
- 100g self-raising flour
- 75g ground almonds
- A little milk
- 100g demerara sugar
Lemon & Poppy Seed Cake

Pre-heat oven to 190 degrees Celsius
- 250 g butter
- 350 ml caster sugar
- 3 XL eggs
- zest of 2 lemons, finely grated
- 450 ml self raising flour
- 10 ml baking powder
- 2 ml salt
- 60 ml water
- 45 ml lemon juice
- 80 ml poppy seeds
- Syrup:
- 250 ml sugar
- 125 ml lemon juice
- 125 ml lemon juice
- Cream Cheese Frosting:
- 175 g plain cream cheese, at room temperature
- 100 g butter, at room temperature
- 250 g icing sugar, sifted
- 5 ml vanilla essence
Blueberry Cheesecake

Biscuit base: Position rack in center of oven and preheat to 190C
- For the biscuit base:
- 2 1/3 cups digestive biscuit crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup sugar
- Filling:
- 900g cream cheese, room temperature
- 1 1/2 cups sugar
- 1/4 cup all purpose flour
- 5 large eggs
- 450ml sour cream
- 1/4 cup milk
- 1 tablespoon vanilla extract
- Topping:
- 1/3 cup blueberry jam/conserve
- 300g blueberries
Raffaello Coconut Cupcakes

Preheat the oven to 160C
- 170g unsalted butter, room temperature
- 1 cup sugar
- 3 large eggs at room temperature
- 1 1/2 teaspoons pure vanilla extract
- 1 1/2 cups flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup milk
- 120g shredded coconut
- For the cream cheese frosting:
- 100g white chocolate, melted and cooled to room temperature
- 100g unsalted butter, room temperature
- 225g cream cheese, slightly colder than room temperature
- 300g powdered sugar
- 1 teaspoon vanilla extract
- 2 tablespoons heavy cream
- Extra coconut, if desired, for sprinkling
Rum Cake Balls

Using a hand held mixer combine softened butter, condensed milk, cocoa power, syrup and rum
- 350 g cake crumbs
- 150 g butter
- 1/2 can condensed milk
- 3 - 4 tablespoons cocoa powder
- 4 tablespoons maple syrup
- 3 - 4 tablespoons rum or amaretto OR you can use rum essence

This is a recipe that I have recreated from a Pizza Express starter
- 2 Garlic and Coriander Naan breads
- 300g mushrooms, sliced
- 1 large red onion, chopped
- 280ml single cream
- Bunch of dill and/or parsley, chopped
- knob of butter
- 1 tsp smoked paprika
- Salt and Pepper to taste
Crab, Corn and Pepper Rice Salad

Combine all ingredients in a large bowl, quick and simple
- 15 crab/seafood sticks, chopped
- 200g canned sweetcorn
- 1 red pepper, diced
- 2 boiled eggs, chopped
- 2.5 cups of boiled white rice
- 0.5 cup of mayonnaise
- Salt and pepper to taste
Coffee Cake

Separate the eggs, yolks in one bowl and whites in the other
- For the sponge:
- 6 eggs
- 6 tbsp sugar
- 6 tbsp flour
- For the filling:
- 400ml double cream
- 2 tsp sugar
- 1 tsp vanilla extract
- Coffee syrup:
- 0.5 cup of boiled water
- 3 tsp coffee
- 2 tsp sugar
- 1tsp rum essence
- Cocoa powder for dusting
Banana & Chocolate Muffins

Mix the mashed bananas, sugar, egg and butter together
- 5 regular ripe bananas or 4 large bananas (mashed)
- 0.5 cup of sugar
- 1 egg
- 1/3 cup of butter
- 1 tsp baking soda
- 1 tsp baking powder
- 0.5 tsp salt
- 1.5 cups of flour
- Bar of preferred chocolate (100g)
