Ingredients
- 125g butter
- 175g caster sugar
- 2 large eggs
- zest of 2 lemons
- 175g self raising flour
- pinch of salt
- Juice of 2 lemons
- For the glaze:
- 2 tbsp Limoncello
- 100g icing sugar

Preparation
Step 1
Preheat your oven to 180 C/ gas mark 4.
Step 2
Grease a loaf tin
Step 3
Cream together butter and sugar and add eggs and lemon zest, beating them in well.
Step 4
Gently fold in the flour and the salt, mixing thoroughly and then add the lemon juice.
Step 5
Spoon the batter into your prepared tin and bake for 45 to 50 mins or until cake tester comes out clean.
