Ingredients
- I pkt ginger nut biscuits
- Enough brandy and sherry to dip each biscuit in
- 600mls double cream - lightly whipped
- 4 pieces chopped stem ginger - optional
- Cherries & nuts for decoration -- I use walnut halves

Preparation
Step 1
Dip both sides of each biscuit in brandy
Step 2
Sandwich in pairs with one third the cream with the chopped ginger mixed in
Step 3
Stand biscuits on end to make a 'log'
Step 4
Cover with the remaining cream
Step 5
Decorate with cherries & nuts
Step 6
Place in fridge for several hours for the biscuits to soften.
Don't over whip the cream or it won't spread
