- 125g unsalted butter, softened
- 125g light muscovado sugar
- 1 large egg
- 1 tsp vanilla essence
- 150g plain flour
- 1/2 tsp baking powder
- pinch of salt
- 50g dried cranberries

Step 1
Heat the oven to 180c
Break up the chocolate into small little finger nail pieces and set aside.
Put the soft butter, sugar, egg, vanilla, flour, baking soda and salt into a bowl and beat thoroughly until fully combined.
Stir in the chocolate and then the cranberries.
Line a baking sheet with none stick baking paper.
With a teaspoon, put a little dollop of the mixture onto the paper in a rough mound.
Repeat with all the mixture leaving enough space for spreading.
Bake in the oven for about 15 mins until golden.
Remove from the oven, leave to cool for a minute then transfer to a wire rack to cool fully.
