Christmas Festive Stollen

This is a German Christmas fruity bread. It is rich and delicious with marzipan in the centre

Ingredients
- 15g fresh yeast / 1 teaspoon dried yeast
- 200ml. milk
- 1 egg
- 75g sugar
- 1 pinch of salt
- 75g butter
- 400g strong plain flour
- 100g dried mixed fruits
- 50g chopped walnut
- 100g mixed peel
- 200g marzipan
- Icing sugar for dusting

Preparation
Step 1
Dissolve yeast in warm milk and a teaspoon of sugar. Leave to stand for about 10 minutes.
In a large bowl, combine the yeast mixture with the egg, sugar, salt, butter, and flour; beat well.
Step 2
When the dough has begun to pull together, turn it out onto a lightly floured surface, and knead in the mixed fruits, walnuts and mixed peel. Continue kneading until smooth.
Place the dough in a lightly oil large bowl. Cover with a damp cloth and let the dough rise in a warm place until doubled in volume for about ¾ hour.
Step 3
Knock the dough down and turn it out onto a lightly floured surface. Roll the marzipan into a sausage and place it in the centre of the dough. Fold the dough over to cover it; pinch the seams together to seal.
Place the loaf, seam side down, on the prepared greased baking tray. Cover and leave to rise in a warn place until doubled in volume.
Step 4
Bake in the preheated oven 180C/ Gas 4 for 10 minutes, then reduce heat to 150 C / Gas mark 2 and bake for a further 30 to 40 minutes, or until golden brown.
Allow the stollen to cool on a wire cooling rack. Dust with icing sugar.
