Cherry Berry Christmas Cake
This cake is a lighter version of the traditional Christmas fruit cake It is light , fruity and have a lovely flowery flavour

Ingredients
- 1 cup strong Jasmine flower tea
- 50g dried cranberries
- 50g Goji berries
- 50g glace’ cherries
- 50g raisins
- 25g candied peel
- 175g butter
- 175g caster sugar
- 3 eggs
- 250g SR flour
- Rind of 1 lemon
- 1 teasp. mixed spice
- 1 teasp. essence of rose water

Preparation
Step 1
Soak the fruits in the Jasmine flower tea 3 hours. Cream butter and sugar together. Add beaten eggs. Then add in the berries and Jasmine tea liqueur.
Step 2
Fold in the flour, spice, lemon rind and rose water. Line a loaf tin with greaseproof paper. Grease well. Spoon the cake mixture into a prepared tin.
Step 3
Bake in the centre of the oven Gas mark 4 or 180C for 45 minutes.
Cool on a wire rack. Decorate the cake with icing sugar.
