Ingredients

  • 100g caster sugar
  • 150g margarine
  • 225g SR flour
  • 20g chopped cherries
  • ½ an egg beaten
  • 1 tsp. Lemon rind

Preparation

Step 1

Grease 2 baking trays.
Cream butter and sugar together with an electric mixer till light and fluffy.

Step 2

Add in lemon rind, cherries and flour.
Add in beaten egg to form a soft dough.

Step 3

Turn the dough out onto a flour board. Roll out to 5mm thickness. Use a 6cm round cutter and cut into 20 round biscuits.

Step 4

Transfer onto baking trays. Bake in a preheated oven 200C/ Gas 5 for 10 minutes.
