Lovely crunchy biscuits taste lovely With a cup of tea on a Christmas afternoon
- 100g caster sugar
- 150g margarine
- 225g SR flour
- 20g chopped cherries
- ½ an egg beaten
- 1 tsp. Lemon rind

Grease 2 baking trays.
Cream butter and sugar together with an electric mixer till light and fluffy.
Add in lemon rind, cherries and flour.
Add in beaten egg to form a soft dough.
Turn the dough out onto a flour board. Roll out to 5mm thickness. Use a 6cm round cutter and cut into 20 round biscuits.
Transfer onto baking trays. Bake in a preheated oven 200C/ Gas 5 for 10 minutes.
