Ingredients

  • 25g Butter
  • 1 Onion, chopped
  • 1 Clove Garlic, crushed
  • 1 Red Pepper,chopped
  • 1lb Pork Sausages
  • 2 x 410g Mixed Beans
  • 400g tin Chopped Tomatoes
  • 300ml Veg Stock
  • Tomato Puree

Preparation

Step 1

Heat butter and fry chopped onion , garlic, and pepper

Step 2

Add sausages and fry until golden brown

Step 3

Crush half the beans lightly with the back of a fork, add to the pan with stock, tomato puree, and tin tomatoes.

Step 4

Season to taste, bring to the boil and then simmer for 20 minutes

Serve with crusty bread
