Hello Dave, so tell us...


When did you begin your blog and what inspired you to start it?


I started in March 2012. I was inspired seeing somebody else's blog. I thought I could do a lot a better, so I started my own.

If you could go back in time, what is the one piece of advice you would give your younger self as they started out on your blog?


Use a tripod to take photographs!

What is your favorite dish of all time?


I have a few, but probably my cauliflower risotto with chocolate jelly.

Your photos are great, in your opinion what makes a dish beautiful?


In the case of taking food photographs less is definitely more. Use a large white plate, indirect daylight/sunlight is by far the most generous light to take photos in. As stated above, use a tripod to avoid any blurring.

Do you have a secret weapon in the kitchen?


I probably have a few. Espuma(cream whipper), one thing I can't live without though is my digital thermometer.

What is your earliest memory involving food?


Picking strawberries direct from a field. Putting them in a little cardboard carton and eating most of them before I would get home.

Are there any chefs that you admire in particular?


John Campbell and Heston Blumenthal. Regardless of your opinion on Heston, he is a culinary genius, simple. SOmetimes he over eggs the pudding but some of his discoveries over recent years are fantastic.

John Campbell was in charge of The Vineyard when I visited a few years ago. It today is still the best dinner I've had. His slant on the norm makes for truly wonderful dishes.

Jason Atherton is also an amazing chef.

If you could be a contestant or guest on any cooking show what show would you choose?


Masterchef, if I could get the time off.

Which Gourmandize recipe would you recommend? (if none take your fancy add your own and share it with us!)

Never be put off by anything in cooking. It literally is as easy as making cake, admittedly sometimes you do need to spend a lot of time preparing things.
