Hello Eat Properly, so tell us...


When did you begin your blog and what inspired you to start it?


I started 'how to eat properly' about a year ago now. It was something I'd wanted to do for a while and the time just felt right last August. It started as a way for me to archive my creations and family recipes and to share them with friends and family.

If you could go back in time, what is the one piece of advice you would give your younger self as they started out on your blog?


Don't worry about doing what you think is 'fashionable'. Just keep cooking the food you want to make and trust that that is good enough.

What is your favorite dish of all time?


This is too difficult to answer but in the blog my favourites are probably the Polish dish ryba po grecku (Greek Fish) , the linguine with breadcrumbs, russian salad and the super awesome cookies.

Your photos are great, in your opinion what makes a dish beautiful?


Always start with great ingredients and don't mess around with them too much - in a salad you want to see what's gone in to it. I don't like my food to look like it's been messed around with too much, I hate over staged photography and don't like the idea of a chef having handled the food too much, it stops it seeming appetising to me. I love home cooking and that's what my blog is all about so I always try and make sure my photos reflect that.

Do you have a secret weapon in the kitchen?


I super love my magimix food processor. Possibly the best kitchen investment I ever made. Also, I've got an amazing Anolon casserole dish that is simply wonderful to use.

What is your earliest memory involving food?


Basically being really interested in it. I was a fair bit pickier when I was younger but food has always been important to my family. Perhaps one of strongest childhood food memories was eating a bacon buttie cooked my my nan on soft white bread with butter and ketchup. Not at all classy but seriously delicious. Mmm...I could eat one of those now. Also, weekend breakfasts were a big thing when I was a child and it was one of main times we would all eat together. I remember my parents putting together all the eggs, mushrooms, sausages and toast before we would all sit down together to enjoy it together. Also, another really important feature of my childhood would be the various Polish feasts my Babcia would prepare for important occasions like birthdays, Easter, Christmas Eve etc. Pierogi, proper potato salad and barszcz will always be comfort food to me.

Are there any chefs that you admire in particular?


I find myself regularly returning to the Moro cookbooks, anything from Ottolenghi, Dan Lepard is my go to for bread and baking I also love a book I have about the pinxtos in San Sebastian - all the top bars in the town contributed several of their key recipes, it's a real delight to explore and recreate my favourites from it.

If you could be a contestant or guest on any cooking show what show would you choose?


I love Iron Chef! The high camp and bizarreness of it entertains me no end. I still love Master Chef but would much prefer to be on the Australian version than the UK one. It seems to be much more about sharing skills and helping people improve.

Which Gourmandize recipe would you recommend?


For some serious indulgence my chocolate, peanut butter and salted caramel no-bake cake is seriously good. It's very rich and very addictive but worth trying at least once in your life.

A much healthier option is my prawn and sweet potato curry. I regularly make this as a week day dinner after work.

Any last words or message for our readers?
