Slow Cooker Sundays: Garam Masala Chicken Curry

- 2 tbsp chilli & garlic oil
- 1 red onion
- 1 red pepper
- 3 skinless chicken breasts
- 1 medium potato, peeled
- 2 handfuls cup mushrooms
- 1 medium dried red chilli
- 1 tin chopped tomatoes
- 2 tbsp creme fraiche
- 2 tbsp red wine
- 2 tsp grated fresh ginger
- 2 tsp chopped fresh coriander
- 2 tsp mild curry powder
- 2 kaffir lime leaves
- 2 tbsp garam masala powder
- 1 tbsp ground turmeric
- 1 tbsp cornflour
- salt and pepper, to taste
Chocolate Cupcakes with Peppermint Ice Frosting

The combination of chocolate and mint in these cakes makes them the perfect after-dinner treat!
- For the cakes:
- 6 oz caster sugar
- 6 oz margarine
- 3 medium free-range eggs
- 6 oz self-raising flour
- 2 heaped tbsp cocoa powder
- 1 tsp vanilla extract
- For the buttercream frosting:
- 8 oz icing sugar
- 6 oz unsalted butter, softened
- dash Wilton BLUE icing colour
- 1 tsp peppermint extract
- 2-3 tbsp water
- Edible embellishments of your choice, I used: Silver stardust, Pearly 100's & 1000's, and Silver Balls, from Waitrose
- Sparkle Snowflakes, from Sainsburys
- Silver Shimmer Spray from Dr Oetker

- 6½ oz unsalted butter
- 6½ oz orange flavoured milk chocolate (I used 1 whole Terry's Chocolate Orange)
- 3 oz plain flour
- 1½ oz cocoa powder
- 10 oz golden caster sugar
- 3 free-range eggs
- tsp orange blossom water
- 2 tbsp white icing sugar
- water
- orange food colouring paste
- small blob white ready roll icing
Raspberry Rose Cupcakes

Raspberry Red Velvet Cakes with Rose Water Frosting
- For the cakes:
- 75g golden caster sugar
- 30g butter, softened
- 1 medium egg
- 1 tbsp cocoa powder
- 2 tsp red food colouring (I used a 'Christmas Red' paste from hobbycraft)
- ½ tsp vanilla extract
- 60ml buttermilk
- 75g self-raising flour
- 2 tbsp dried raspberry pieces (small) plus extra for decorating
- For the frosting:
- 150g icing sugar
- 50g butter, softened
- 60g cream cheese
- 1 tsp rose water

Start by pre-heating your oven to 160° (325° F, Gas Mark 3) and thoroughly grease a shallow bun tray
- 6½ oz unsalted butter
- 6½ oz milk chocolate (I used Cadbury's Dairy milk)
- 3 oz plain flour
- 1½ oz cocoa powder
- 10 oz golden caster sugar
- 3 large eggs
- 5 oz Malteasers (I used a 135g bag)

Start by pre-heating your oven to 160°C (325° F, Gas Mark 3) and line a 12 hole muffin tray with muffin cases
- For the cakes:
- 6 oz caster sugar
- 6 oz margarine
- 3 medium free-range eggs
- 6 oz self-raising flour
- 2 heaped tbsp cocoa powder
- 6 squares of white chocolate, grated (optional - but really yummy!)
- 1 tsp vanilla extract
- For the buttercream frosting:
- 7 oz icing sugar
- 5 ½ oz unsalted butter, softened
- dash Wilton creamy peach icing colour
- 1 tsp Neilson Massey Orange Blossom Water
- 2 tbsp water
- Edible embellishments of your choice, I used:
- Bronze crunch & Silver stardust, both from Waitrose
- Edible diamonds from Hobbycraft

- For the cake:
- 6 oz golden caster sugar
- 6 oz margarine
- 3 medium free-range eggs

- 1-2 tsp black food colouring

- 2 tbsp icing sugar
- water
- 50 g red ready-roll icing

Elder-Rose Spritz

Quorn, Pepper & Goat's Cheese Tart

Start by pre-heating your oven to 200°C (400° F, Gas Mark 6) and greasing a large baking sheet
- 320g puff pastry roll (I used Jus-Roll low fat one)
- 1 heaped tbsp sweet chilli cream cheese (I used Philadelphia)
- 250g Quorn chicken style pieces
- 1 red onion
- ½ red pepper
- ½ orange pepper
- 1 fresh red chilli
- 4 cloves of garlic
- 100g goat's cheese, no skin
- 2 tbsp olive oil (I used chilli infused)
- 1 tsp cumin seeds, crushed
- salt and pepper to taste
