Indian Moong pudding

Moong is a protein powerhouse, low in calories and high on fibre
- 1 cup Split green gram dal or Yellow moong dal
- ¼ cup parboiled rice
- 1 cup Jaggery powder – I always use powder, see notes on how to break the Jaggery into pieces
- ¼ cup Cashew nuts
- ¼ tsp Cardamom pods
- 1 cup Grated coconut
- 1 cup sugar
- 1 cup whole Milk
- 2 tbsp Ghee
- 3-4 saffron strands
- 1 tsp rose essence – optional

- - 4 onions
- - 4 cloves of garlic
- - 1 red pepper

- 2 Tb ghee
- 2lb steak cut into 1 inch cubes

- 3 garlic cloves

1. Grind the cashew nuts, onions, cream, tomatoes and tomato ketchup into a fine paste
- 1 chicken boiled and shredded
- 2 tsp. ginger & garlic paste
- 3 tsp. cashew nuts
- 8 tsp. tomato ketchup

- 150 g. tomatoes
- 3 small onions fried (brista)

- 1Lb (16oz) Plain Flour
- 8oz Butter or Margarine
- Large pinch of Salt
- 1/4 Cup of Water
- (Baking beans, Greaseproof paper, Cling film and 2 Pie dishes).

King prawns/shrimps can be cooked in a very delicious manner and is a hot favourite among the people
- 20 King Prawns/Shrimp (Washed)
- 2 or 3 pc Potatoes
- 1 pc Tomato (big)
- 2 or 3 Green Chillies
- 1 tablespoons of Ginger Paste
- 5-6 tablespoons of Oil : Mustard (preferred)/Sunflower oil
- Medium Size Onion: 2 nos
- Spices:
- Cummin Whole(Jeera): 1/4 teaspoon
- Cinnamon (Darchini): 1/4 of a stick
- Cardamom (Elaichi): 3 small one
- Clove (Labongo/laung): 3
- Bay leaves (Tejpata) : 3
- Garam Masala: ½ teaspoon
- Cumin powder (Jeera): 1 table-spoon
- Turmeric powder (Halud/Haldi): 1 tea-spoon
- Sugar: 1 tea-spoon
- Water

Carrot soup with dates accompanied with vegetable samosas

Peel and chop the onion. Peel the carrots and cut them into pieces and do the same for the dates
- For the soup:
- 500 g baby carrots
- 1 medium onion
- 50 g pitted dates
- 2 cubes chicken stock
- 1L of water
- 1 tablespoon of honey
- 1 tsp cumin
- 1 tsp turmeric
- 1 tablespoon olive oil
- salt and pepper
- For 18 samosas:
- 1 courgette
- ½ a yellow pepper
- 1 baby carrot
- ½ onion
- 5g fresh ginger
- 1 tsp Allspice
- 4 dried dates
- 10 coriander leaves
- 1 packet of filo pastry
- 1 egg

Balti Chicken

Wash the chicken, heat a large pan with oil that covers the base
- 2 Baby chicken (ask the butcher to remove the skin and cut the chicken into 8 pieces)
- 8 Tomatoes (these need to be diced)
- Oil (to cover the base of the pan)
- Haldi (1/4-1/2 tsp)
- Red Chilli Powder ( 1/2 tsp)
- 7 Whole peppercorns
- Salt ( 1 tsp per chicken)
- Crushed Garlic (3-4 cloves)
- Crushed ginger (1 tsp)
- Dried tiny red chillies (10 pieces)
- Corriander powder (Dhania powder) (1/2 tsp)
- Garnish:
- Fresh Coriander ( 1 bunch finely chopped)
- Fresh green chillies ( 6-7 finely chopped)
- Fresh ginger ( 1 tsp finely chopped)
