Ingredients

  • 120g melted butter
  • 120g caster sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 220g plain flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • Pinch ground cloves
  • 100g dried currants
  • 100g chopped walnuts
  • 1 egg white lightly beaten

Preparation

Step 1

Pre heat the oven to 180c
In a bowl, whisk together the butter, sugar, eggs and vanilla extract.
In a seperate bowl, combine the flour, baking powder, salt and spices.
Add the dry ingredients to the wet ingredients and mix well.
Add the walnuts and currants and mix well.
Divide the mixture into three and spoon onto a baking sheet lined with baking paper into logs about 10cm long.
Bake in the oven for about 20 mins.
Remove from the oven and cool for 10 mins.
Cut each log into 2cm slices and arrange back onto the baking sheet.
Bake for a further 10 mins or until golden brown.
Remove from the oven and cool thoroughly.
