Ingredients

  • For the cake
  • 150g mixed dried fruits
  • 1 orange, zest and juice
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1 tsp ground nutmeg
  • 225g self raising flour
  • 400g dark muscovado sugar
  • 150g cocoa powder
  • 1 tsp salt
  • 220g unsalted butter
  • 4 eggs
  • 300ml warm water
  • 300ml evaporated milk
  • For the drizzle
  • 100g dark muscovado sugar
  • 125ml water
  • 125g dark chocolate
  • 45ml whiskey

Preparation

Step 1

Preheat the oven to 175*c
In a small bowl mix together the fruits,orange zest and juice and spices. Allow to soak as you make the cake.
In a large bowl, mix the flour, sugar, cocoa powder and salt.
Cut the butter into small chunks and add to the dry ingredients, rub together until the mixture resembles breadcrumbs.
In a seperate bowl, whisk the eggs, add the warm water and evaporated milk and mix well. Pour onto the dry mixture and whisk with an electric mixer until smooth.
Add the soaked fruits mixture and stir well.
Pour into a large oven proof rubber cake dish and bake for 90 mins.
Remove the cake from the oven and allow to sit for a few minutes whilst you make the drizzle.
For the drizzle:
In a small saucepan mix the sugar and water, then heat until the sugar has fully melted, just up to simmering point.
Break the chocolate into small pieces and pour the sugar water mixture over it, whisking well until the chocolate has melted.
Add the whiskey and stir.
Turn the cake out onto a serving plate whilst still warm and drizzle the chocolate sauce over it.

You can add a small amount of seasonal nuts with the fruits to add an extra texture.
