- 2-3 medium potatoes, chunked
- 2 medium onions, quartered
- 4 tomatoes, chopped OR 1 tin
- 2 peppers, chunked
- 3-4tbsp olive oil
- herbs
- salt and pepper

Step 1
Add everything to a roasting tin and mix well.
Step 2
Cook in oven at 220C for 15mins, then turn oven down to 180C for 15-20mins
