Ingredients

  • 250g room temp butter
  • 200g soft brown sugar
  • 250ml golden syrup
  • 2 eggs seperated
  • 750g plain flour
  • 3 tbsp ground ginger
  • 2 tsp mixed spice
  • 2 tsp bicarbonate of soda
  • liquid colour icing pens to decorate

Preparation

Step 1

Preheat the oven to 180*c. Line baking sheets with grease proof paper.
Beat the butter and sugar together with an electric beater until paler in colour.
Add the golden syrup and egg yolks and beat until combined. Use a spatular the scrape in all the sides to get an even mixture.
Stir in the sifted flour, ginger, mixed spice and bicarbonate of soda. Use the beater again if its too much hard work on the arms.
Turn out onto a lightly floured surface and knead until smooth.
Press the dough into a disc, wrap with cling film and chill in the fridge for about 30 mins.
Take the dough from the fridge and place between two sheets of grease proof paper.
Roll out to about 5mm thickness.
Using a gingerbread cutter, cut out the shapes.
Re-roll the leftovers and cut more shapes until you've used all the dough.
Bake in the oven for 10 mins or until golden brown.
Remove from the oven and cool on a wire rack.
Decorate in any fashion you choose to make the gingerbread folk come to life!
