Salt and Pepper wedges

- 2lb Potatoes
- Salt and pepper to taste
- olive oil

Preparation
Step 1
Bring a large saucepan of water to the boil. When water come to the boil salt liberally
Step 2
preheat oven to Gas mark 6
scrub potatoes and cut in half and then cut into thick wedges
Step 3
Add to boiling water and cook for 3 mins (time begins only after pot has returned to the boil)
Step 4
Drain potatoes well, shaking of excess water. Transfer on to a large baking sheet.
Drizzle potates with oil, salt and pepper. Toss to coat and spread out into an even layer
Step 5
Roast for 20mins before turning then flip wedges and bake for a further 20-25 mins or until wedges are nicely browned
Garlic granules can be added for garlic wedges
