- 4oz Butter
- 4oz Caster Sugar
- 2 Eggs
- 6oz Sifted Self-Raising flour
- 4 tables spoons of desiccated coconut
- 2 tablespoons milk

Step 1
Cream the butter and Sugar together until light and fluffy. Beat in the eggs one at a time, adding a little of the flour with the second. Fold in the remaining flour, 3 tablespoons of the coconut and the milk.
Line and grease a loaf tin and pour in the mixture. Sprinkle the remaining coconut on to the mixture.
Bake in a preheated oven, Gas Mark 4, for 1 to 11/4 hours. Turn on to a wire rack to cool
