Ingredients

  • 2 black tea bags
  • 4 tbsp brandy
  • 1 tsp rosewater
  • 1 tbsp runny honey
  • 115g sultanas
  • 75g raisins
  • 50g currants
  • 180g strong bread flour
  • 1½ tsp baking powder
  • ½ tsp ground cinnamon
  • ½ tsp ground nutmeg
  • 2 tbsp medium-cut orange marmalade
  • 120g soft brown sugar
  • 1 large egg
  • 30g unsalted, melted butter
  • 2 tbsp marmalade
  • marzipan fruit

Preparation

Step 1

Infuse 200 ml of hot wtaer with with tea bags, the brandy, honey, rosewater and dried fruit.

Leave overnight to soak, or until the fruit is plump with moisture.

(If time is precious, warm the ingredients gently to hasten the process)

Step 2

Heat the overn to 180C/350F/Gas 4 and grease a bread loaf tin with baking paper/ butter.

Step 3

When the fruit is plump, drain off the liquid.

Step 4

Combine the flour, baking powder and spices into a bowl. Add the marmalade and the brown sugar. Mix in the eggg and melted butter and combine into a dough (soft to touch).
Add the fruit and mix.

Step 5

Add the dough to the baking tin and bake for 50/60 minutes.

Remove from the oven and leave to cook for 10 minutes. Remove the loaf from the tin. Leave to cool again.

Step 6

Additionally, brush on some marmalade for a sweeter taste! Enjoy!
