- 300g of bell pepper
- 3 tbsp of ketchup
- 100g of zucchini
- 100g of cherry tomatoes
- 1 shallot
- 1 small onion
- 3/4 cup of tomato sauce
- 1 clove garlic
- 1 tbsp of olive oil

Preparation
Step 1
Wash the vegetables.
Dice the bell peppers, cut the zucchini into round slices, and chop the tomatoes into quarters.
Dice the shallot and onion.
Peel the garlic, remove the green shoot in the middle, then crush it.
Step 2
Sauté the garlic, shallot, and onion in hot oil. Add the vegetables and cook for 10 minutes over medium heat.
Step 3
Turn the heat down to low and add the tomato sauce. Cook, covered, for about 30 minutes.
Step 4
Add the ketchup right before serving, and adjust seasonings to taste.
This goes very well with rice, pasta, or semolina.
