Ingredients
- 1/2 cup of shredded cheddar cheese
- 4 i ten inch tortilla wraps
- 1 cup of cooked rice
- 2 tablespoons of salsa
- 1 tablespoon of olive oil
- 1 cup of canned black beans, drained, rinsed and slightly mashed
- 2 teaspoons of taco seasoning
- 1 small onion chopped
- optional toppings: salsa, guacamole, sour cream

Step 1
preheat oven to 148 degrees
in a skillet cook the onion with olive oil for around 3 minutes
stir in rice beans salsa and seasoning
Step 2
spread 3/4 cup of the bean and rice mixture into middle of each wrap
sprinkle with cheese
fold wraps into burritos
place seam side down in baking dish
cover with foil and bake for 15 minutes
remove from oven
serve with salsa, guacamole or sour cream
