Ingredients
- Pizza Dough for standard 12 inch pizza
- 1 avocado
- 1/2 lemon
- 1 handful of pine nuts (optional)
- 2 stems of fresh basil
- 2 cloves garlic
- 1/2 red bell pepper
- 1 tomato
- 4-5 stalks of asparagus
- 4-5 artichoke hearts
- 1 red onion
- 1 handful of corn meal (for the oven pan)
- 4-5 slices of sun dried tomatoes

Preparation
Step 1
Preheat oven to 350f. In a bowl, mix 1 mashed avocado, one clove of minced garlic, juice from 1/2 of lemon, fresh basil leaves (chopped) and pine nuts (chopped) to create a pesto sauce. Spread evenly to coat pizza crust.
Step 2
In a warm sauce pan, saute red bell pepper (chopped), stalks of asparagus (chopped), 1/2 or 1 red onion (chopped), and 1/2 tomato until slightly soft. Drain off any excess liquid.
Step 3
While the vegetables are cooking, chop artichoke hearts and sun dried tomatoes and sprinkle them on the pesto sauce.
Step 4
Once your vegetables are ready, arrange them on the pizza. Next, using a baking sheet or pizza stone covered with corn meal, cook the pizza for10-12 minutes, or until the vegetables are tender and the dough is cooked.
Step 5
Let the pizza cool, cut it up, and enjoy!!
