Ingredients
- Tartare sauce
- 1 egg yolk
- 1 tbsp lemon juice
- 2 tsp mustard powder
- 1 cup olive oil
- 2 tbsp chopped capers
- 8 chopped gherkins or pickles
- 2 chopped shallots
- 2 tbsp chopped parsley
- 1 tbsp chopped dill
- 2 tbsp chopped chives
- Salt & freshly ground black pepper

Preparation
Step 1
Put the egg yolk, lemon juice and mustard powder in a large mixing bowl and whisk vigorously, or pop into a food processor until the mixture thickens.
Step 2
While whisking/processing, add the oil slowly until mixture becomes creamy.
Step 3
Transfer to the mixture to a bowl and add capers, gherkins, shallots, parsley, dill and chives and stir well.
Season with salt and pepper.
