Easy Quinoa Salad

During my brief crash-test vegan diet, I discovered the wonderful Quinoa. Serve it as a side, make it into meatballs or put it in a salad like this one.

Ingredients
- 2 cups quinoa
- 3 cups chicken broth
- 2 tbsp olive oil
- 1/2 tsp salt
- 1 cup chopped cherry tomatoes
- 1/2 cup capsicum
- 1/2 cup cucumber
- 1/3 cup feta cheese
- A handful of chopped olives
- 1 tbsp chopped shallots
- 1 tsp chopped fresh mint
- 1 tsp grated lemon skin
- 2 tsp lemon juice
- 1 tsp sherry vinegar

Preparation
Step 1
Pop the raw quinoa in a bowl and pour in boiling hot water and let it soak for a few minutes. Then rinse and drain.
Step 2
In a large saucepan od boiling water, dissolve chicken stock then stir in quinoa.
Step 3
Put a cover over your pot, lower the heat to low and let it simmer away for 10 - 15 minutes until all the water has been absorbed. Uncover, give it a stir and leave it to cool.
Step 4
Combine olive oil, mint, lemon rind, lemon juice, sherry vinegar and salt.
Step 5
Add cooled quinoa, tomatoes, and the remaining ingredients; toss well.
