Preparation
Step 1
Peel the potatoes and cut into chips (the larger the chip the longer it will take to cook)
Step 2
Add the potatoes to a pan of boiling water and par boil until the potatoes become fluffy around the edges. (This will usually take about 5 minutes but depends on the variety of potato.)
Step 3
Drain the potatoes then place the lid back on and vigorously shake the saucepan to rough up the edges of the potatoes. Remove the lid and leave to cool for at least 1 hour. (You do not have to leave the chips to cool, but you get a better chip which is crispier if you do.)
Step 4
Spray a baking tray with spray oil add the potatoes and spray again. Cook until golden brown. (This will usually take about 35 minutes depending on the size of the chips).
For a tasty twist add minced garlic and dried Italian herbs to the saucepan before shaking to fluff the potatoes.
