  • 6 egg yolks
  • 6 tbsp white sugar
  • 1/2 tsp vanilla extract
  • 2 1/2 cups heavy cream
  • 2 tbsp brown sugar

Preparation

Step 1

In a large mixing bowl, whisk egg yolks with 4 tbsp sugar and vanilla until frothy.

Step 2

Stir the cream in a saucepan over a low heat until it comes to the boil and then immediately remove it and stir in the whisk egg yolk mixture. Stir well.

Step 3

Pour cream mixture into into a heatproof bowl over a pot of steaming water for 2 - 3 minutes.

Step 4

Remove mixture from heat quickly and pour into a heat proof dish.

Bake in oven for 30 minutes. Then take it out and let it cool to room temperature before refridgerating for one hour, or even overnight.

Put the oven grill on.
Combine the white and brown sugar and sift the mixture onto the custard.

Put it under the grill and watch as the sugar bubbles (but don't let it burn).

Remove and cool. Eat!
