Scrambled eggs with mushrooms, avocado, and rocket

- 4 eggs
- 1 large mushroom (any type) sliced
- ½ an avocado sliced
- Handful of fresh rocket
- 1 slice of multigrain or rye bread toasted

Preparation
Step 1
Heat a non-stick frying pan on low whilst whisking the eggs together in a bowl until they are evenly mixed.
Step 2
When the frying pan is hot enough, add the egg mixture and sliced mushroom. Cook on low heat for 4 to 5 minutes until the mixture has cooked through (without becoming dry). Use a wooden spoon to gently push the egg mixture and keep it from sticking to the bottom of the pan.
Step 3
Spread the avocado slices (like butter) on the toasted bread. Then add the handful of rocket. Spoon the eggs onto the toast and serve immediately.
