Lime Frosted Gingerbread Cookie Bars 1 Picture

Ingredients

  • For the Cookie Bars:
  • 225g / 1 Cup Butter, room temperature (make sure you use the best quality butter you can get your hands on)
  • 340g / 1 2/3 Cup Caster Sugar
  • 85g / 1/3 CupDark Brown Sugar
  • 1 Tsp Vanilla Extract
  • 1 Medium Egg & 1 Yolk
  • 425g / 3 1/3 Cup Plain Flour
  • 1 Tsp Baking Powder
  • 1 1/2 Tsp Cinnamon
  • 1 1/2 Tsp Ginger
  • 3/4 Tsp All Spice
  • For the Buttercream:
  • 110g / 1/2 Cup Butter
  • 250g / 2 Cup Icing Sugar
  • 1 Tsp Vanilla Extract
  • Zest of 1 Lime
  • 1-2 Tbsp Lime Juice

Preparation

Step 1

Preheat your oven to 190c/375f and line baking tray with greaseproof paper.

Step 2

In a large mixing bowl beat you butter and smooth and creaming, then beat in the sugars until it is light and fluffy.

Then beat in the egg, yolk and vanilla extract until well combined.

Step 3

Sift all the remaining dry ingredients into a separate bowl and add these dry a ingredients to the butter and egg mixture a few tablespoons at a time until all has been added and it has been well mixed in.

It is a very stiff mixture so towards the end it will take a bit of elbow grease you mix in the flour.

Step 4

Once this has been done press the cookie dough evenly into the pre-prepared tin and bake in the preheated oven, on the middle shelf for 20 minutes.

Allow the cookie bars to cool completely in the tin (this will them easy to frost later on)

Step 5

While the cookie bars are cooling you can make the lime buttercream.

In a mixing bowl beat your butter till smooth and creamy, then add in the vanilla extract and the lime zest.

Step 6

Now slowly add in the icing sugar, once it has all been added you can pour in the lime juice and beat till it's well combined and the buttercream is nice and fluffy.

Once the cookie bars have cool cover them in an even layer of the lime buttercream, now remove the greaseproof paper and cut the bars in to squares and enjoy.
