Preparation

Step 1

Preheat oven to 190˚C.
Place the flour, baking powder and salt in a large bowl.
Cut the butter into small cubes.

Step 2

Add the butter to the flour etc, then rub using your fingertips until the mixture resembles fine breadcrumbs.
Stir in 3/4 of the cheese.
Make a well in the centre.

Step 3

Whisk the egg, marmite and milk together.
Pour mixture into the well.
Use a blunt knife to bring the mixture together to form a soft, but not sticky, dough.
If too dry, add a little more milk.

Step 4

Place dough on a floured surface and roll out to 2cm thick.
Cut with a 6cm round cutter.
Gather up the trimmings and repeat until you have no dough left.

Step 5

Place scones on a baking sheet.
Brush with milk.
Scatter remaining cheese on the top.

Step 6

Bake for 10-12 mins until golden.
Cool on a wire rack.

These scones can be served alone or simply with butter, as they are just so soft and yummy!!
