This healthy meal can be made with normal or sweet potato depending on who will be eating it. Perfect for lunch, tea or a filling low-calorie snack.

Ingredients

  • 2 sweet potatoes
  • can of tuna
  • small red onion
  • small red chilli
  • 1 lime
  • 3tbsp greek yoghurt
  • handful coriander

Preparation

Step 1

Wash the sweet potato.
Prick all over with a fork.
Cook in the microwave on high for 18-20 mins or until tender.

Step 2

Drain the tuna.
Finely slice the red onion
Chop (and deseed if you wish) the chilli.
Squeeze the juice out of the lime.
Roughly chop the coriander.

Step 3

Cut the sweet potatoes in half lengthways.
Spoon the tuna, then red onion and chilli onto the potato halves.
Drizzle over the lime juice.
Dollop the yoghurt on top, then scatter over the coriander.
