Preparation

Step 1

Stir the flour, salt and yeast in a large bowl.
Make a well.
Pour in water and olive oil.
Stir with a wooden spoon until you have a soft, fairly wet dough.
On a floured surface, knead for 5 mins until smooth.
(OPTIONAL: cover and leave to rise for 60-90 mins)

Step 2

Crush the garlic.
Finely chop the basil.
Mix passata, basil and garlic together and season to taste.

Step 3

Cut the tomatoes in half.
Grate the cheese. (Slice the mozzarella)
Prepare any other toppings.

Step 4

Preheat oven to 240˚C.
(If the dough has been left to rise, knead briefly.)
Split dough into 2 or 4 balls.
On a floured surface, roll into 2 large 25cm bases, or 4 small bases.
Transfer onto floured baking sheets.

Step 5

Smooth sauce over the bases, leaving 1cm clear at the edges.
Sprinkle with the cheese, tomatoes and other toppings.
Drizzle with olive oil (or squirt with a 1 calorie spray) and season.

Step 6

Bake for 8-10 mins until crisp.
