Lunch idea for the Parents
With Mum's love of chorizo and Dad's love of rice, this meal combines them both for a tasty, filling lunchtime idea.

Ingredients
- 250g chorizo (try small chorizo sausages, but one long one would also work)
- 1 onion
- 2 garlic cloves
- 1tsp sweet smoked paprika
- 250g basmati rice
- 500ml hot chicken stock
- 2 roasted peppers from a jar (or 1 ordinary red pepper)
- 395g tin of cherry tomatoes (or chopped tomatoes)
- 85g pitted green olives

Preparation
Step 1
Halve the small chorizo lengthways (or chop the chorizo into chunky pieces)
Halve and slice the onion.
Finely chop the garlic.
Chop the pepper(s) into chunks.
Make up the chicken stock.
Step 2
Heat a large frying pan on medium-high.
Add the chorizo, cut side down where possible.
Cook until oil starts to come out and they begin to crisp at the edges.
Step 3
Tip the onion and garlic into the pan and cook for a few more mins.
Step 4
Add the paprika and rice, stirring well.
Pour over the chicken stock and peppers.
Stir well then cover with a lid and cook for 5 mins.
Step 5
Stir in the tomatoes and olives.
Cook 8-10 mins more until rice is tender and liquid has been absorbed.
